It’s 3pm, Sunday and breakfast has been prepared by my homie Kath. My plate is piled high with gluten-free pancakes and bacon, and completed with a maple syrup swirl. It’s not the carbs or animal fat that excites me but the syrup. It’s real maple syrup – not that imitation stuff – and a rare treat in my minimal sugar life. I savour the sweetness of this moment, awash with gratitude for this impromptu meal and the liquid that has travelled half-way round the world to top it off.
